As someone who has played a bunch of Kerbal Space Program, Simple Rockets, and Simple Rockets 2, I have to say, Spaceflight Simulator is my personal favorite rocket simulator! I think Simple Rockets 2 is a great game, and I have had a lot of fun with it, but for me personally, it's a little bit... too much. I have to really be in the right mood for that game and really commit myself to it. For me, Spaceflight Simulator has everything I love about Simple Rockets 2, but in a package that feels much more "jump in and play" to me. The game feels super streamlined, building and controlling rockets feels great and easy, and, although it has options to put the difficulty on par with the other rocket sims with it's hard mode for those who want that, I absolutely love the normal mode! I really love having a rocket sim that I can just hop in and play casually, but still feel challenged by, and feel accomplished when I complete missions!
