Ingredients You’ll Need
  • Fresh chanterelle mushrooms (the fresher, the better!)
  • Vegetable broth
  • Dried porcini mushrooms
  • Butter
  • Onion (finely chopped)
  • Arborio rice
  • White wine
  • Garlic (minced)
  • Shallots (finely chopped)
  • Freshly grated Parmesan cheese
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)
Step-by-Step Instructions
  1. Foraging for Flavors
Begin by gathering fresh chanterelle mushrooms from your local market or, if you’re feeling adventurous like Indy, forage for them in a nearby forest. Wash them thoroughly and slice them evenly.

  2. Infuse the Broth
Heat a pot of vegetable broth and enrich its flavor by adding dried porcini mushrooms. Let it simmer while you prepare the rest.

  3. Sauté the Base
Melt butter in a wide pan over medium heat. Add the finely chopped onion and sauté until it becomes translucent.

  4. Toasting the Rice
Pour the Arborio rice into the pan with the onion and stir it gently until the grains start to change color. This step ensures the rice absorbs the rich flavors.

  5. Deglaze with Wine
Add a generous splash of white wine and let it evaporate completely. This gives the risotto its signature depth.

  6. Cook the Rice
Gradually ladle the warm broth into the pan, one scoop at a time, stirring continuously. Allow the rice to absorb each addition before adding more broth. Patience is key to achieving the perfect creamy texture.

  7. Prepare the Mushrooms
In a separate skillet, heat a bit of butter or olive oil. Sauté the minced garlic and shallots until fragrant. Add the sliced chanterelles and cook until they release their water and take on a golden hue.

  8. Finish with Parmesan
When the rice is almost fully cooked, stir in freshly grated Parmesan cheese to give the risotto its signature creaminess. Season with salt and pepper to taste.

  9. Serve and Garnish
Spoon the risotto into a bowl and top it with the sautéed chanterelles. Garnish with freshly chopped parsley for a final touch of freshness.

Use an Instant Pot to saute through step 5, then at step 6 pressure cook on high for 6 mins with a quick release. Just as good and much quicker.

Don’t sweat the small stuff, especially when there’s a perfectly chilled bottle of Prosecco waiting for you at home. -Father Guido Sarducci
