It did though. It showed his over confidence, cockiness, playful behavior as well as how much he loves doing this kind of thing. Removing the middle finger is kinda childish when we already have swear words being spoken as well as sexual innuendos in most of these movies.

Wish they'd done this in the movie, adding in Starlord flipping of Thanos added nothing to the movie.

Did any one else see how they took off his middle finger
