1. You need lower tier recipes to upgrade them into better ones (at least for grandmaster equipment) so you need to gather them all anyway - at least all from school which you want to use .
2. The best equipment needs quite a high level to equip, and some ingredients that may be tricky to get if you are just going for main quest line, so it is even better opportunity to get both of that requiments.
Of course if both my points are wrong, i will change this next time i will play Witcher 3 - since i want to upgrade this guide for quite long time (i would like make it colorblind friendly, but so far nobody wanted to cooperate with me on that...yes i need someone colorblind).
