Can not speak for triple monitor setup as I never tried it, But this is the worst sim for VR by far. Blurry and frames are an issue. Project cars 2 and original Assetto are far better superior out of the box.
I spent some time trying to tweak some performance options of my 2070Super and game options but not much better.
I don't recommend this game at all for VR.
