The EE is just the classic game with a few customisable QoL improvements, no changes to original content, stable performance and scaling with high res, some design additions like sprite highlights (that look awful.) Personally I never had any issues with the GoG version, a few mods fix a lot of potential issues but unless you want to support GoG or see this on sale, this version is the one to go for now just because it has less potential to ♥♥♥♥ up on you.

Now for the pretentious circle jerk:

Unfortunately still the best example of character development and narrative design in games. Very subversive and nuanced, the best setting and universe you'll ever play in, the worst combat you'll ever experience. People like to say "this is the best book you'll ever play" but the interactivity of games is, in my opinion, the reason why a lot of the narrative elements are so effective.

You'll feel uncomfortable and question your character and companion's moral compass, you'll spend 2 hours talking to a character about the universe of the Planes and not understand a word until you think about it for the next 2 weeks. You'll find secrets that serve to both elucidate and obfuscate the world and story of your character. You'll attempt to answer the philosophical (and sometimes polictal) questions of this game and come up with your own meaning of the story and character arcs.

You'll think about playing as a thief or warrior but ultimately roll a mage with max wis, int and chr.
